Curry Chicken Salad with Applies & Cranberries
Serves 2
Ingredients
* 2 tablespoons low-fat mayonnaise
* 1.5 tablespoons plain yogurt
* 1 teaspoon curry powder
* 1 tablespoon stone ground mustard
* 2 teaspoons water
* 1 cup chopped, skinless cooked chicken breast (4 ounces)
* 1 small apple, diced
* 1/3 cup diced celery
* 3 tablespoons dried cranberries
* 2 tablespoons almonds
* Salt and pepper to taste
Directions
1. Combine mayonnaise, yogurt, mustard, curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the chopped chicken, chopped apple, celery, cranberries, and salt; stir mixture well to combine. Top with almonds. Cover and chill. Serve with pita bread or on top of a salad
