What is more romantic than oysters on the half shell? This Valentine’s Day, Executive Chef Paul Turano, owner of Arlington’s Tryst, offers up a recipe for oysters with Champagne Mignonette.

Champagne Mignonette

2 teaspoons good quality Champagne vinegar
1 1/2 teaspoons finely chopped shallot
Pinch of coarsely ground black pepper
Pinch of sugar
1 teaspoon finely minced chives

6 oysters, washed and scrubbed free of any dirt

Combine all of the ingredients for the mignonette in a bowl and let stand for 30 minutes. Carefully open the oysters being careful to remove all of the top part of the shell. Discard the top and free the oyster from the bottom. Top with 1 teaspoon of the sauce and serve.
