Easy Oyster Sauce

My home is Louisiana. We are famous for our spectacular seafood dishes and sauces. Not every culture is familiar with oyster sauce. This sauce is a very aromatic sauce that is able to retain it's aroma and flavor during long cooking times. Oyster sauce serves well with Chinese, Asian and Thai foods. Oyster sauce will serve well over meat, rice or vegetables. It really adds flavor and zest to these dishes quite well. This is a very simple and easy to prepare recipe that I hope you will enjoy preparing and serving to your family, friends and guests as much as I do. This sauce will keep well in a glass jar with a lid for up to thirty days.

This sauce is excellent for serving with fish and also stir-fry meals. It is really inexpensive to make and will fit most any budget. It takes less time to make than most sauces. It is much better homemade because it does not contain all the preservatives as the store bought sauces. It is mostly used on dishes the same as you would use soy sauce. Tip-Oyster juice may be found in the Asian food department of the grocery store. This recipe includes two types of oyster sauce. The first recipe is very simple and less time consuming. The second recipe takes a little more time and effort.


1/2 pound of oysters, shucked

1 cup of oyster juice

1 teaspoon of salt

1 bottle of soy sauce


1. Mince oyster well.

2. In a medium saucepan, add oysters, oyster juice, and water.

3. Bring the mixture to a boil.

4. Lower the heat and simmer for 10 minutes. Keep covered.

5. Remove from heat and add salt. Let cool to room temperature.

6. When the mixture is completely cooled, strain the oyster mixture through a fine mesh cloth seive into a bowl.

7. Add the bottle of soy sauce.

8. Pour the mixture into a clean pot and bring to a boil. Reduce the heat and let simmer for 7 minutes.

9. Remove from the stove and let cool to room temperature. After the sauce is cooled, pour into a glass jar with a lid.

Thick Oyster Sauce

8 tablespoons of real butter

1 cup of shallots, chopped

1/2 pound of oysters, shucked

2 cups of oyster juice

1 teaspoon of thyme

1 teaspoon of oregano

1 teaspoon of basil

1 clove of garlic, minced

2 tablespoons of soy sauce

2 tablespoons of flour, all-purpose

1 cup of heavy whipping cream

1/2 teaspoon of salt

1/2 teaspoon of pepper


1. In a large skillet, melt half of the butter over medium heat.

2. Saute' shallots until soft. Set aside in a bowl.

3. In a medium mixing bowl, place oysters and juice, thyme, oregano, basil, garlic, and soy sauce. Stir until well mixed.

4. In the same skillet over medium heat, add the other half of butter and flour and mix well.

5. Add all the ingredients in the oyster bowl and stir until thick.

6. Add the saute'ed shallots and continue stirring.

7. Add the cream and salt and pepper. Continue to cook until thick.

8. Serve over hot rice, meat, or vegetables and enjoy!
