Anne Burrell's latest cookbook, "Own Your Kitchen: Recipes to Inspire and Empower", is just in time for the fall season. The 200-plus page book features warm, delicious comfort food that is guaranteed to satisfy. She manages to maximize the potential of each ingredient rather than including tons of expensive or hard to find items.
During the introduction of the book, you really get some insight into her culinary point of view. Before she dives into the recipes, she first gives ten simple tips that are often overlooked. She corrects some common misconceptions about seasoning, and urges the use of fresh herbs. She also stresses the importance of mise en place or the practice of gathering and organizing all of your ingredients first. Though the concepts are simple, they make a world of difference!
"Own Your Kitchen" features 100 recipes that start at breakfast and end up all the way at dessert. Each recipe has clear and concise steps that read almost as if you were watching her cooking show, "Secrets of a Restaurant Chef". She reminds you of the importance of brown food and suggests frequent QC (quality control) checks to make sure you're on the right track. If you're looking for a relatively easy to make, totally amazing meal? The braised chicken with pomegranate molasses (pictured) is an excellent place to start.
This book reads as one part instruction manual and one part open love letter to comfort food. As you try each recipe, you'll be continually amazed at the quality of food that can come out of your kitchen with a little bit of culinary guidance. The unique ingredients and bold flavor combinations will keep you warm and happy all winter long.
