Oven roasted sweet potatoes are glazed with maple syrup


A maple glaze makes these oven roasted sweet potatoes irresistible.

When it comes to Thanksgiving dinner, we often favor tradition, prepping those old favorites, such as the sweet potato casserole with the mini marshmallows on top. An easy, and healthier way with sweet potatoes, however, is to cut them into wedges and roast them in the oven, then finish them off with a maple syrup glaze. You can make this dish ahead to keep in the oven, then pop into the microwave to heat up for your holiday dinner side dish.

 

Oven Roasted Sweet Potatoes

 

2 or 3 medium sweet potatoes

1 tablespoon plus 1 teaspoon olive or canola oil

Salt to taste

3 tablespoons maple syrup

1-1/2 teaspoons cider vinegar

 

Preheat oven to 425 degrees F. Scrub sweet potatoes and cut into wedges. In large bowl, toss potato wedges with 1 tablespoon oil and salt. Scatter on baking sheet and bake 20 to 25 minutes, turning at halfway point, until tender. Remove from oven and brush potatoes with mixture of 1 teaspoon oil, syrup, and vinegar. Return to oven and bake 5 minutes longer. Serves 4 to 6 as a side dish.

    I adore sweet potatoes and try to make them as often as I can. I mainly roast them. I am thinking of making a sweet potato dish for Thanksgiving and it has a streusel topping! Mmmmm...

    We like sweet potatoes just about any way they can be prepared, but this year I will be serving a cream soup made from the Hawaiian purple sweet potatoes and coconut cream.... But your recipe will be going into my To Try files. thanks, Portia!

    I haven't tried this yet, but I think it sounds very good - and a lot better than the marshmallow topping.
