Oscar Eats: Beef Short Ribs with Florida Orange Texas-Style Barbeque Sauce

The best way to enjoy the annual epic night of stars is with a festive recipe to accompany it.

The Florida Department of Citrus has orange juice-inspired recipes that correspond to whichever movie you may be hoping takes home the gold statue this year.

Beef Short Ribs with Florida Orange Texas-Style Barbeque Sauce

Florida Orange Texas-Style Barbeque Sauce:

  • 1 cup Florida orange juice
  • ¼ cup cider vinegar
  • ¼ cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons steak sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons ground black pepper .
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon orange zest

Short Ribs:

  • 12 beef short ribs, whole ribs
  • Salt to taste
  • Pepper to taste

For Florida Orange Texas-Style Barbeque Sauce: Combine all ingredients in medium saucepan; bring to simmer and remove from heat. Divide sauce in half: use ½ to baste ribs while cooking and reserve ½ to serve with ribs.

For Short Ribs: Prepare hot smoker to 250°F. Season short ribs with salt and pepper to taste. Smoke for 3 hours, basting with ½ prepared barbecue sauce until short ribs are fork tender. Discard any remaining basting sauce. Serve short ribs with reserved Florida Orange Texas-Style Barbecue Sauce on side.

Alternate Slow Cooker Method

Prepare Florida Orange Texas-Style Barbecue Sauce.

Place 2 sliced yellow onions in bottom of slow cooker. Season short ribs with salt and pepper; place on top of onions. Add ½ of prepared Florida Orange Texas-Style Barbeque Sauce; reserve remaining sauce. Add 2 cups Florida orange juice and 2 teaspoons liquid smoke. Cook on low for 3 hours, until short ribs are fork tender. Serve short ribs with reserved sauce on side.

Yield: 6 servings.
