Carrot harvest in Colorado is in full swing. Now through the end of carrot season in November, you’re likely to find great deals on Colorado grown organic carrots. Check anywhere from the farmers market, to CSA’s, to the grocery store for a flavorful bunch of this super healthy root vegetable.
This recipe offers a slightly sweeter tasting carrots than you would get by steaming them alone. Garnish with fresh herbs for an easy side dish with major eye appeal.
Organic honey glazed carrots
- 2 cups organic baby carrots or carrots pealed and sliced
- 1 ½ Tbsp. honey
- 1/3 cup water
- Salt & pepper to taste
Combine all ingredients in a small sauce pan, stir and simmer 15-20 minutes or until carrots are cooked through and honey has created glaze. Uncover and let sit 5 minutes; season with salt & pepper if desired and serve. Enjoy!
