Winter is the season for comfort foods, and cabbage is a low calorie, nutrient-dense comfort food offering many nutrients including vitamins C, B6, B1, B2, A, and K, folic acid, potassium, calcium, biotin, tryptophan, magnesium, and manganese. Cabbage is a good source of fiber and protein.
Cabbage also contains powerful anti-cancer compounds known as glucosinolates. These phytochemicals help protect the body from free radical damage and help fight against carcinogens. The nutrients in cabbage also boost the immune system, lower cholesterol, promote bone health by reducing bone loss, and boost heart and digestive health.
This delicious traditional Irish dish combines nutrient-rich potatoes with nutrient-rich cabbage and is a great way to use leftovers (and if you don’t have any green onions, it’s still good without them). If you have leftover colcannon, it is extremely tasty if thickened up with a little flour and made into cakes, cooked on the griddle!

Colcannon
2 cups mashed potatoes
2 cups green cabbage, shredded
1/4 cup green onions, sliced
Salt and pepper to taste
Butter
Steam or boil shredded cabbage until tender. Drain cabbage and fold into prepared mashed potatoes. Add the onions, season with pepper and dot with butter.
