A juicy and tender breast of chicken with the sweetness of honey and a hint of orange – so delicious! Each of the flavors in this recipe work well with the other so nothing is overpowering. All ingredients work in harmony to create a juicy and delectable chicken breast. Since this recipe is also easy to make and has very few ingredients, makes it just that much better.
Although you can use store-bought orange juice, it makes a positive difference if you juice your own oranges. Since the orange zest (grated orange peel) is important to the taste of the dish, it will be necessary to start with fresh oranges anyway (which are perfect for the garnish, as well).
Although there are many things you can do to ensure chicken breasts are tender (soaking them in milk, soaking them in salt, pounding them with a mallet, etc.), one thing that’s important for tender chicken breasts is not to undercook or overcook them. As we all know, eating undercooked chicken is bad for your health as cooking destroys any bacteria within the chicken. Overcooking chicken dries it out which makes it tough. If you are unsure whether a recipe prescribes the correct amount of cooking time for your particular oven, you should rely on a meat thermometer. The United States Department of Agriculture recommends that the internal temperature of correctly cooked chicken is 165 degrees.
A meat thermometer can be purchased at most any store that carries cooking utensils. Look for an “instant read” thermometer to make it easiest to determine temperature. Instant reads usually show the reading on a dial or digitally at the top of the thermometer and they register the temperature more quickly than other thermometers.
