Many people assumed when the holidays were over regaining a sense of normalcy in our daily routines would come naturally. Little did we know that the Bronco’s would be heading to the super bowl and Denver would be graced with snow storms that CDOT was ill prepared to handle. Most people still have busy work schedules, long commutes and the everyday commitments we promised we would keep when things calmed down.
It’s the end of February and I have yet to gain any sense of normalcy. My healthful homemade meals have been replaced with, with food I’d prefer not to say out loud. That is no way to live, no way to nourish oneself and no way to get through the rest of the cold winter months ahead.
The recipes below fulfill two needs; first the need for healthful meals and second, the need for food that can be easily and quickly prepared.
One dish dinners:
Easy Scalloped potatoes – This recipe is simple and can be prepared with items you likely have on hand. Add some steamed fresh or frozen veggies for a complete meal that will warm you through and through. This makes great leftovers too.
Organic Vegetable Noodle Soup – This is a great recipe to use up leftovers or whatever you may have on hand. Throw in any vegetables and chopped up cooked meat if you are a meat lover to make this as hearty or as light as you’d like.
Organic creamy tomato pasta with Italian sausage – This dish is so simple and tasty. It also makes great leftovers
Organic turkey chili – this recipe is best prepared in a slow cooker or crock pot while you are at work. Spend some time on a Sunday chopping and start this cooking Monday for dinners and lunch you can eat throughout the week. This chili can even be frozen for a later meal.
Organic cabbage and white bean soup with crispy bacon – this recipe can be made in minutes. Put the soup together while frying the bacon for a satisfying healthy meal.
Organic crock pot green chili– this recipe is best prepared in a slow cooker or crock pot while you are at work. You can make a big batch and freeze leftovers too.
Organic winter vegetable stir fry – This recipe takes advantage of vegetables that are in stock at nearly every grocery store. You can also get great deals on organic cabbage this time of year
