Finding balance continues to be the theme for this month - and with that I want to share my perfect balance of being your food examiner and a yoga instructor.   Each yoga class I teach closes with a saying from "A Year of Living Your Yoga," and one of this week's sayings found that balance and blend!


Once in your life, eat a brownie for breakfast.  Sometimes doing something whimsical feeds the soul and lightens our life.   Find something whimsical to do today and enjoy it.


What a perfect sentiment this time of year - and throughout the year.  Find the lightness in joy and laughter and brownies for breakfast!!


The most scrumptious brownies at the beach are at Sun Deli Subs in Jacksonville Beach.  You must give them a try - the perfect balance of crunch and cake - with or without nuts - corner or middle pieces - they are beyond delicious!!


For a recipe to try - how about a Blondie.   This is a dairy-free version of a brownie that blends the goodness of walnuts and pistachios - but, use any single nut or nut combination you like!


Walnut Pistachio Bars


  • 1/2 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1/8 teaspoon baking soda

  • 1 egg

  • 1 cup light brown sugar, firmly packed

  • 1/2 teaspoon vanilla extract

  • 1/2 cup chopped walnuts

  • 1/2 cup pistachio nut, chopped

  1. Preheat oven to 325°.

  2. Sift flour with salt and baking soda. In a mixing bowl with hand-held electric mixer on high, beat egg until foamy. Add brown sugar and vanilla; beat well. Stir in flour mixture, then nuts.

  3. With a spatula, spread batter in well-greased 8- x 8- x 1-inch pan. Bake 25 to 30 minutes, or until top has formed a crust. Cut into 2-inch bars - or smaller; cool in pan.

These were served at my non-dairy Holiday open house and were a big hit - and so super easy!!  Next time we will go into all of the amazing health benefits of walnuts and pistachios!

    Breakfast bars that freeze well can be a great thing for busy single parents who need to get pre-portioned meals out to kids when running late. Beats pop-tarts to death when you add nutritious items.
