On Vacation: Food in New Mexico-Green Chile

It's always a treat coming home. You get to see people you grew up with and eat food you fondly remember from earlier days. While sometimes the food does not meet your nostalgia levels, I'm pleased to report that the Santa Fe Baking Co was everything I remember...and more.

Growing up in New Mexico, green chile (that's how it's spelled here) is a staple in our diets (and New Mexico's largest agricultural crop). Like all great foods, it's a food that works for any dietary restriction. If you're a vegetarian, gluten sensitive, vegan or simply a healthy eater, there is always a version of green chile that will suit you.  It's here at the Baking Co where they put this vegetable to excellent use.

While green chile may be a staple for any New Mexican meal, at breakfast time, it's all about the breakfast burritos and huevos rancheros. Both call for eggs, tortillas (flour or corn) and a healthy dose of "The Green".

The Baking Co wisely serves up their breakfast burritos all-day. If you're in the mood for a simple vegetarian style burrito or something spicier like the Carne Adovada burrito (seasoned pork cooked in red chile), this place has you covered. Trust me, it doesn't matter what time of day it is, not many things compare to a well-prepared spicy, but not too spicy breakfast burrito.

A key trait of good chile is that it is spicy, but not overwhelmingly hot. Good chile should give you plenty of heat and flavor as well. The Baking Co never disappoints with their chile. Sure, there are many other dishes this place serves, but I always go back to this classic and I am never sorry I stick with the same choice.
