Families are under more stress than normal these days. Food will not make this stress go away but sitting down to a good meal followed by a beautiful, old fashioned dessert will make you forget them for a little while.
A dessert that is made very little these days is Pineapple Upside Down Cake. This goes back to our grandmother's time. Remember her pulling that cake out of the oven and smelling that brown sugar and pineapple. Remember watching with baited breath while she flipped that cake over. You just couldn't wait until it cooled enough to eat. Give that memory to your kids.
1 yellow cake mix (mix as per directions and set to the side)
1 20 ounce can of pineapple slices
1 10 ounce jar maraschino cherries
1 cup brown sugar
1/2 stick softened butter or margarine
Mix brown sugar and softened butter until crumbly. Pour brown sugar in a 10 inch cake pan with high sides. A spring form pan will work as well. Make sure the pan is evenly covered with the sugar. Place the pineapple slices in the sugar until the bottom is covered. Place maraschino cherries in the center of each slice (more if you like). Pour the cake batter evenly over the pineapples and bake in a 350 degree oven until a toothpick comes out clean (about 30-40 minutes). Let cool for 5 minutes. Place large plate over pan and carefully flip over. The result is a beautiful and delicious cake.
The suggestion is not that food can take troubles away but it can bring people together for awhile. Invite your grandmother or mother over and let her share this memory with you again.
