Shrimp is a lean protein containing B vitamins, iron, and omega-3s. As a matter of fact, for years, the American Heart Association has advocated the benefits of seafood twice a week, to reduce the risk of heart disease – the leading cause of death among American men and women. Additionally, new evidence indicates that pregnant and breastfeeding mothers should consume at least eight to 12 ounces of seafood each week, to improve their baby’s eye and brain development.

1 package (12-ounce) SeaPak Popcorn Shrimp
1 package (8-ounce) of New Orleans style yellow rice (we used Zatarain’s), prepared according to package directions
2 slices bacon, chopped (can substitute 1 tablespoon canola oil)
1⁄2 cup chopped cilantro
Salt and pepper
- Prepare shrimp according to package directions and keep warm.
- In a large skillet over medium-high heat, add bacon and cook until crisp. Add prepared yellow rice to the pan (do not remove the rendered fat) and heat through. Add salt and pepper to taste. Add shrimp and cilantro and toss to coat. Serve warm.

Every day of the week features a different engaging diversion – for example, each Tuesday, there will be a weekly consumer poll with “Dueling Dishes” squaring off. The month-long calendar includes lots of creative recipes for everything from Shrimp Benedict to Shrimp-Stuffed Jalapeno Poppers; specially themed Fridays, including Backyard Beach Night and Family Art Night; valuable coupons for popular SeaPak products; and chances to win great prizes. The federal government’s 2010 edition of Dietary Guidelines for Americans* recommends eating a variety of seafood at least twice a week, for optimal health.
