Nutritional yeast is a savior to many vegans and vegetarians and also very different than the live baking yeast so many are familiar with.
How is it made? Nutritional yeast is grown (because yes, yeast is a bacteria) on mineral enriched molasses and then heated to kill the bacteria.
Why is it heated? Live yeast cannot be ingested because it will continue to grow in the intestinal track and feed of the bodies nutrients.
So what? Not so fast. Nutritional yeast is high in B vitamins which means it works against stress in the body, and also contains B12 a difficult vitamin to obtain without consuming animal friends (meat). But wait, there’s more! Nutritional yeast contains all 18 amino acids, making it a complete protein.
So I can’t make bread with it? No you cannot, but it is good for just about everything else imaginable. It has a mild cheesy flavor and is great in sauces, on salads, on toast, on pasta, or to add some health to the traditional garlic bread.
