Amy asked: Have you ever eaten potato chip cookies?
I have had potato chip cookes, although I must admit I was leery the first time I tried one. They are delicious! something about the added salt and such really brings out the flavor of the pecans and vanilla.
You can use the healthier baked potato chips for these, but the recipe works best with the classic greasy potato chips.
Potato Chip Cookies
1 cup butter
1/2 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup crushed potato chips
1/2 cup chopped pecans (optional)
Cream the butter and sugar together until light and fluffy. Add the vanilla. Stir in the flour until well blended, then add the crushed potato chips and mix well. Stir in the pecans if using. Drop by teaspoons on an ungreased baking sheet about 2 inches apart. Flatten with a cookie press or the bottom of a glass dipped in sugar. For a holiday look, sprinkle with colored sugar before baking. Bake at 350 degrees F for 10 to 12 minutes or until lightly browned. Makes about 5 dozen cookies.
