This evening I made another delicious raw dish, Nori|Sushi Rolls with Nut Pate. This nut pate really shocked me with is mock-fish flavor, taste just like tuna (in my opinion) :-)…
2 cups soaked raw walnuts or sunflower seeds or other nut or seed of your choice
1/2 onion chopped
1 celery stalk chopped
2 cloves garlic
1 TBL lemon juice
2 TBL dulse flakes
1/4 cup fresh herbs of your choice or 1 TBL dried herbs
1 TBL Nama Shoyu
Process ingredients in food processor until desired consistency.

1/2 cucumber, julienned
1/2 avocado, julienned
1/2 bell pepper (red), juilenned
1/2 mushrooms, sliced or enokitake Japanese mushroom
*your options in ingredients are endless, just add what suits your taste.
Place a nori|sushi sheet lengthwise on a bamboo rolling mat, shiny-side down. Position the sheet about 1-inch from the edge of the mat.
Place the nut pate in the center of the nori sheet and spread the pate evenly over the nori sheet.
Be sure to leave a 3/4-inch strip of nori uncovered on the far side.
Place some julienne bell pepper, cucumber, mushroom and avocado along the center of the pate. Be careful not to overfill the nori.
Roll nori tightly from the bottom, using the mat to help make a tight roll. To seal the nori moisten with water about 1/2 inch at the top.
Repeat with remaining ingredients.
Slice with a sharp knife into 1 inch thick slices.
