No-bake treats: Fruit and herb popsicles

There are still a few warm days left in the summer, and Litehouse Instantly Fresh Herbs offers these mouthwatering recipes for fruit and herb popsicles. Each popsicle recipe takes just four ingredients plus water.

Litehouse Instantly Fresh Herbs are freeze dried herbs that can be used as fresh herbs in recipes – 1 teaspoon of fresh herbs equals one teaspoon of Instantly Fresh Herbs! Litehouse Herbs are available on Amazon.com – if you have an herb garden, just substitute your own herbs for the Litehouse Herbs in the following recipes.

Mango-Strawberry Lemon Grass Pops

· 1/3 cup water

· 2 tsp. Instantly Fresh Lemon Grass

· 1-1/2 Tblsp. blue agave nectar

· 1 cup unsweetened mango juice

· 4 large strawberries, sliced thin

Lemon-Blackberry Pops

· 1/3 cup water

· 2 tsp. Instantly Fresh Lemon Grass

· 1-1/2 Tblsp. blue agave nectar

· 1 cup unsweetened mango juice

· 5 large blackberries, halved

Directions for each:

Mix water and lemon grass in a 1 quart saucepan; add agave nectar and simmer. Let the mixture reduce for 2-3 minutes, then set aside until it returns to room temperature.

Pour mango juice into a bowl or cup with a spout, then add syrup mixture and stir. Pour juice mixture into popsicle molds, leaving approximately 1/2-inch of space at top. Add fruit, then insert popsicle sticks or lids. Freeze for two to four hours or until frozen. Makes four 3-oz. popsicles.
