When I first saw this recipe in an old Taste of Home magazine, it immediately caught my eye! It was one of the best apple pie recipes I have tasted in a long time!
I adjusted the amount of nuts it called for in the original recipe and to be quite honest with you, the next time I make this, I plan to leave them out completely.
The original recipe also used sugar free pudding and jello and a reduced fat graham crust. I chose to use the regular variety.
No Bake Apple Pie
- 5 medium apples, peeled, cut into small, thin slices
- 1 3/4 cups water. divided
- 1 pkg lemon jello
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 pkg cook and serve vanilla pudding
- 1/3 cup chopped walnuts, heaping
- 1 graham cracker crust
In a large saucepan combine apples, 1 1/2 cups water, jello and spices.
Bring to a boil.
Reduce heat, cover and simmer for 4-6 minutes or until apples are tender.
Add in pudding and remaining water.
Cook for 2 minutes or until thickened.
Remove from heat and stir in nuts.
Pour into crust.
Refrigerate overnight.
