Employees Only in the West Village has a rum cocktail on their summer menu that tastes of warm-weather deliciousness, featuring the flavors of pineapple and ginger. Perfect for New Yorkers who love a cocktail that is spicy and fruity!
Ginger Smash by Jason Kosmas & Dushan Zaric
1 1/2 oz. Cana Brava Rum
3/4 oz. Fresh squeezed lime juice
1/2 oz. Apple liqueur
1/2 oz. Maraschino liqueur
2 thin slices of fresh ginger root
2 1-inch cubes of fresh pineapple
2 demitasse spoons of superfine sugar
Muddle the ginger, pineapple and superfine sugar in a mixing glass. Then add the spirit, liqueurs and juice. Add ice. Shake well. Pour all contents into an old fashioned (rocks) glass. Garnish with a pineapple leaf and serve.

1 oz Don Q Coconut Rum
1 oz Ford's Gin
1 oz. Fresh lime juice
1/2 oz. Infused syrup
1 oz. Coco Lopez Puree
3 Drops Orange Blossom Water
Pour all ingredients except the club soda into a mixing glass. Add large cold ice and shake vigorously. Strain all contents into a Collins glass and top with club soda. Garnish with orange zest.
Cedar Local in the Financial District has a cocktail named A Real Daiquiri, which is a rum-forward take on the classic drink.

2 oz Brugal Extra Dry Rum
¾ oz Simple syrup
1 oz Fresh lime juice
Combine all ingredients in a cocktail shaker and shake vigorously. Strain into a rocks glass over fresh ice. Garnish with a lime wheel.
