I created this wonderful healthy banana bread just today to use up some things I had on hand. It is very moist and lightly sweetened.
Find everything you need to make this at your local Meijer.
- 1/2 cup butter, softened
- 2/3 cup sugar
- 2 medium eggs, beaten
- 1 t vanilla extract
- 1 cup whole wheat flour
- 2 T wheat germ
- 1 cup quick cook oats
- 1/2 cup walnuts, chopped
- 1 t baking soda
- 1/2 t cinnamon
- 1/4 t salt
- 2 mashed very ripe bananas
- 1/3 cup low fat buttermilk
- Preheat oven to 350°. Spray a 9x5" baking pan with cooking spray. Set aside.
- In a large bowl, cream together butter and sugar. Add eggs and vanilla, beat til fluffy. Set aside.
- In a small bowl, mix flours, wheat germ, oatmeal, soda, salt and cinnamon. Add dry ingredients alternately with bananas and buttermilk to butter mixture.
- Pour batter into prepared pan. Bake 30-35 minutes; cool in pan 10 minutes then remove to a cooling rack to cool completely.
