New Year's Healthy Cookbook: Whole wheat banana oatmeal bread recipe

I created this wonderful healthy banana bread just today to use up some things I had on hand. It is very moist and lightly sweetened.

  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 2 medium eggs, beaten
  • 1 t vanilla extract
  • 1 cup whole wheat flour
  • 2 T wheat germ
  • 1 cup quick cook oats
  • 1/2 cup walnuts, chopped
  • 1 t baking soda
  • 1/2 t cinnamon
  • 1/4 t salt
  • 2 mashed very ripe bananas
  • 1/3 cup low fat buttermilk
  1. Preheat oven to 350°. Spray a 9x5" baking pan with cooking spray. Set aside.
  2. In a large bowl, cream together butter and sugar. Add eggs and vanilla, beat til fluffy. Set aside.
  3. In a small bowl, mix flours, wheat germ, oatmeal, soda, salt and cinnamon. Add dry ingredients alternately with bananas and buttermilk to butter mixture.
  4. Pour batter into prepared pan. Bake 30-35 minutes; cool in pan 10 minutes then remove to a cooling rack to cool completely.
