- 1/2 cup butter
- 3 tablespoons all purpose flour or coconut flour
- 2 teaspoons white pepper
- 1/2 teaspoon salt
- 1 pint milk or cream
- 1 pound white crab meat, shelled and cleaned
- 1 pound Monterey jack cheese, grated
- 1 cup sharp Cheddar cheese, grated, for topping
- Melt butter.
- Add flour, pepper, and salt. Make a paste by adding milk slowly.
- Cook over low heat, stirring constantly until a thick white sauce forms.
- Grease a 3 quart baking dish.
- Layer crab meat, Monterey jack cheese, then white sauce.
- Bake at 350 degrees 20 to 25 minutes.
- Top with Cheddar cheese and bake until melted.
