The restaurants in America’s finest city have some fine chefs, and for Saltbox Dining & Drinking, snagging one of San Diego’s top talents makes it no exception. The inviting downtown gastro-lounge has appointed culinary cutthroat, Jeremiah Bryant, as Saltbox’s Chef de Cuisine. Having honed his craft at reputable kitchens like El Bizcocho and Delicias, Bryant is ready to lead the kitchen and introduce his take on bar and lounge favorites. Guests can expect thoughtfully constructed, seasonal updates to gastro-lounge dishes. In a careful collaboration, Bryant works in tandem with Saltbox’s Principal Bartender, Jen Queen, to craft ingredient-driven offerings and use a wide variety of inspirations that focus on seasonal and local products.
Bryant has a fertile flare for fusing traditional cooking techniques with modern, innovative approaches. Take for instance the chef’s Pot Roast: a comforting cool weather dish with braised short rib, confit carrots, pearl onion, and red potato. Grilled Wild Salmon with lemon potato cake, grilled asparagus, and sherry honey glaze packs in a flavor with nuances both subtle and robust. The flavorful SoCal “Carnitas” Poutine with fries; decadent Burrata Fondue with roasted poblano, and crostini; and the “Esplendido” Sandwich with housemade pulled pork, capicola, gruyere, and pickle prove just how adept Bryant is at updating gastro-lounge classics.
Bryant’s new dinner menu will be available October 21 at Saltbox, where guests can enjoy the new fare in style, including al fresco on the patio and at the bar with a stiff original from Jen Queen.
