National Welsh Rarebit Day - English style with branston pickle


Welsh Rarebit with Branston Pickle.

Welsh Rarebit, or cheese on toast were one of the main stays when we were children, in England. We were extremely poor and had many meatless days. Welsh Rarebit is nutritious and easy to make.

You will need for 2 slices:

  • half ounce of butter
  • 4 ounces of grated cheese (we like sharp Cheddar)
  • salt and pepper to taste
  • 2 tablespoons of milk
  • 1 teaspoon of flour
  • Worcestershire sauce to taste (optional)
  • pinch of dried mustard (Coleman's optional)

Melt the butter in a saucepan, add the rest of the ingredients and stir continually. The cheese will melt and the mixture become slightly thicker. Toast 2 slices of bread. You can butter them if you wish, but I personally prefer not to.

Spread the mixture on top of both slices of toast, and then brown them under the grill/broiler until the top starts to brown.

There are many variations to this recipe and my Mum often used half milk and half ale to give the taste an extra bite.  Instead of just having a cheese mixture on toast you can also slice tomato on top, add Branston pickle, as I did, have mushrooms, sardines, bacon, or ham.
