Recipe
Gumdrops Cookies
• 1 cup shortening
• ½ cup of white sugar
• ½ cup of packed brown sugar
• 2 cups sifted all-purpose flour
• ½ tsp. baking soda
• ½ tsp. salt
• 1 ½ cup of quick cooking oats
• ¾ tsp. vanilla extract
• ½ of fresh vanilla bean
• 2 large eggs
• 48 gumdrops
Steps
1. Preheat oven to 375 degree F
2. Cream shortening with vanilla extract. Add sugars gradually in shortening, cream well. Then add eggs and beat well.
3. Sift flour, baking soda and salt together; add to cream mixture and mix well.
4. Add vanilla fresh vanilla beans and stir in oats.
5. Shape dough into ball into 1 ½ in balls and place on greased cookie sheet.
6. Make a large indentation in balls and place gumdrop in each indentation.
7. Bake for 10-12 minutes. Let cool on cooling rack 7-10 minutes.
