Celebrate National Garlic Day on April 19th with these garlic roasted potatoes from Food.com, from the kitchen of Food Network star Ina Garten, the “Barefoot Contessa.” These potatoes make a great side dish for a meat entrée, and the recipe makes a large batch.
Garlic Roasted Potatoes (adapted from Ina Garten):
· 3 lbs. small red potatoes
· 1/4 cup olive oil
· 1-1/2 tsps. kosher salt
· 1 tsp. black pepper
· 2 Tblsps. minced garlic (approximately six cloves)
Preheat oven to 400-degrees F.
Clean the potatoes and cut in halves or quarters (depending on size of potatoes and the size pieces you want), leaving skins on. Combine the Place olive oil, salt, pepper and garlic in a large bowl; put potato pieces in the bowl and mix until potatoes are well-coated.
Spray a large baking sheet with cooking spray (may need two depending on the size of your baking sheet). Dump potatoes onto baking sheet and spread into one layer. Bake for approximately one hour, turning twice with a spatula during cooking so they will bake evenly, until brown and crisp.
