National Blueberry Pancakes Day (Video)

Monday, January 28th, is National Blueberry Pancake day. With the average person spending just 4 minutes a day eating breakfast it's not hard to imagine why pancakes aren't an every day indulgence. But there are Sundays, or Saturdays (depending on everyone's schedule), or some other convenient time to get together with family and friends to enjoy a fantastic blueberry pancake breakfast (or dinner) together. So why wait any longer? NBPD (yes, we will refer January 28th this way henceforth) is 8 days away and a Sunday breakfast, brunch, or Monday get together can be yours!

A few fun facts about pancakes. First off, the French pancake is called a crêpe. It is thin ,crispy, and often served with sweet or savory fillings. Blinis are pancakes from Russia that are served with caviar and sour cream, or they folded over and filled with cream cheese and/or jam! Pancakes are incredibly easy to make and with blueberries added in, they become even more delicious.

The recipe in the video shows making pancakes from scratch. The ready-made mixes found in supermarkets can shorten the process by two thirds and they taste great. The mix in the box requires just added water (enough to coat the spoon after mixing well), the zest of a lemon or orange (if available ), and the blueberries. The key to a great pancake is a hot pan or griddle.
