January 6th is National Bean Day! Here are a couple of bean recipes to try. This short video shows you how to make yourself some famous Boston Baked Beans. While this recipe takes quite some time to prepare, it is extremely easy and the time involved is mostly for soaking the beans and cooking them, not that you will be cooking for hours. The end result is well worth it.
If you're looking for a meal to cook up with beans rather than just a side; then this Chicken Enchilada Casserole is worth trying. Always a hit with family as well as guests.
Chicken Enchilada Casserole
- 4 boneless, skinless chicken breasts, cooked and shredded
- 18- 6 inch tortillas, cut in half
- 1- 15 oz can black beans
- 1 can corn, drained
- 1 large can green chili enchilada sauce
- 1 package shredded Monterey Jack cheese
- 1- 8 oz package sour cream
- garlic salt, to taste
Layer enchilada sauce, tortillas, chicken, black beans, corn, cheese, and sour cream several times until all ingredients have been used. End with enchilada sauce and cheese covering everything. Cover and bake in preheated 350 degree oven for approximately 45 minutes. Cool slightly before serving.
