NAO introduces Spanish Caribbean menu this week

NAO is a student staffed restaurant at The Culinary Institute of America located at the grounds of the Pearl Brewery. The goal of this fine restaurant is to celebrate Latin food, traditions and culture. NAO’s menu is made up of traditional Latin American dishes with a modern twist.

As part of this celebration of food NAO launched a new Celebration of Cuisines program. It consists of the introduction of a new menu inspired by a Latin American country every six weeks with countries like Peru, Brazil, Argentina, Chile, Venezuela and Spanish Caribbean. Executive Chef Geronimo Lopez will head this culinary tour with specifically made menus.

The Spanish Caribbean-inspired menu is the third installment in the NAO’s Celebration of Cuisines program. It was unveiled on Tuesday December 3, 2013 and will be available for six weeks until January 17, 2014. This special menu blends the cuisines of Puerto Rico, Cuba and the Dominican Republic which are influenced by the cuisines of Spain, Africa, East India and China. Guests to NAO during this time will get to experience this unique blend of flavors and traditions as well as be immersed in the music and art of the Spanish Caribbean culture.

This special menus prix fix menu includes an appetizer, main course and dessert for $39.

  • The appetizer choices are: Conch Fritter & Plantain with lobster veloute and spicy picked garlic; or Shrimp Ceviche “Coco y Mango” with tiger’s milk, gulf shrimp, fresh mango and toasted coconut flakes.
  • The main course choices are: Roasted Cobia Sofrito with fresh roasted filet, roasted Caribbean peppers and saffron rice stew; or Cubano Crispy Glazed Pork with a tangy citrus glaze, chopped roasted peanuts, black bean puree and slaw & onion escabeche.
  • The dessert consists of Zapote Cobbler with Caribbean “persimmon” fruit and fresh cream ice.

A special cocktail from the Spanish Caribbean region is being offered as part of this menu. The Dark and Stormy is made with black strap molasses rum, velvet falernum, lime juice and house made ginger beer.
