NAO is a student staffed restaurant at The Culinary Institute of America located at the grounds of the Pearl Brewery. The goal of this fine restaurant is to celebrate Latin food, traditions and culture. NAO’s menu is made up of traditional Latin American dishes with a modern twist.
As part of this celebration of food NAO is launching a new Celebration of Cuisines program. It consists of the introduction of a new menu inspired by a Latin American country every six weeks with countries like Peru, Brazil, Argentina, Chile, Venezuela and Spanish Caribbean. Executive Chef Geronimo Lopez will head this culinary tour with specifically made menus.
Last week the new Peruvian menu was launched and it will run for six weeks until December 2, 2013. This menu is inspired by the history of Peru and features traditional flavors with a modern interpretation. The prix fixe menu consists of appetizer, main course and dessert for $39. The choices are:
Chupe Seco de Pollo y Quinoa- a traditional Peruvian casserole with corn, quinoa, ajies and peas or Crab Cause-Peruvian purple potato, aji Amarillo-lime emulsion, avocado with amaranth sprouts.
Arroz de Pato-roasted Duck Magre glazed with an aji limo glaze, siyau and honey with Chifa rice or Mahi Mahi “Sudado” – Peruvian aji broth, Yucca and plantain mash, crispy chorizo and heart of palm salad.
