The Celebration of Cuisines program continues at Nao with a Venezuelan-inspired menu that launched on Tuesday May 27 and will run for six weeks until Tuesday July 7. In an effort to explore new flavors from Latin America Nao is introducing different menus inspired by various regions and headed by Executive Chef Geronimo Lopez. Past menus have included cuisines from Oaxaca, Peru, the Spanish Caribbean and Argentina.
Venezuelan cuisine is inspired by its settlers-mainly Italian, Spanish, Portuguese and French and is rich in African and Native American traditions. This Venezuelan-inspired menu consists of a special prix fixe meal that consists of an appetizer, main course and dessert for $42 and an optional wine pairing for an additional $20.
The appetizer choices are:
Chicken Polvorosa - a Caracas style sweet and spicy chicken pot pie or Seven Powers Chilled Seafood Cocktail - Venezuela’s traditional “Siete Potencias” cocktail of shrimp, conch, clams, mussels, aji dulce, onion and tomato with crisp tostadas.
The main course choices are:
Crispy Red Snapper “Parguito Frito” served with plantain tostones, tangy cole slaw and garlic mojo or Butterflied Sirloin Santa Barbara served grilled with queso fresco, yuca fries and an avocado salad.
The dessert wraps up the meal and consists of Bienmesabe - the“tres leches” of Venezuela that is made with an airy coconut genoise, pastry cream, and meringue brûlée.
Nao is a student staffed restaurant at The Culinary Institute of America located at the grounds of the Pearl Brewery. The goal of this fine restaurant is to celebrate Latin food, traditions and culture. Nao’s menu is made up of traditional Latin American dishes with a modern twist.
