NAO is a student staffed restaurant at The Culinary Institute of America located at the grounds of the Pearl Brewery. The goal of this fine restaurant is to celebrate Latin food, traditions and culture. NAO’s menu is made up of traditional Latin American dishes with a modern twist.
As part of this celebration of food NAO is launching a new Celebration of Cuisines program. It consists of the introduction of a new menu inspired by a Latin American country every six weeks and will feature countries like Peru, Brazil, Argentina, Chile, Venezuela and Spanish Caribbean. Executive Chef Geronimo Lopez will head this culinary tour with specifically made menus.
This week the program begins with Oaxaca and will feature a menu that includes items like Red Snapper Sofrito with chayote and plantain salad and Smoke Roasted Skirt Steak with roasted baby potatoes. The Oaxacan menu will run from August 20 to October 23, 2013.
To celebrate the launch of this Oaxacan menu there will be a five-course dinner with beverage pairings with renowned Oaxacan Chef Susana Trilling. The menu includes Minilla de Cazón, Totopos y Fruta, Tlayuda con Tres Salsas; Ensalada de la Milpa; Trio de Moles Oaxaqueños; and Chocolate Oaxaqueno en Tres Versiones. These special dinners will be on Friday August 23 and Saturday August 24 with a reception at 6p.m. with the dinner at 7p.m. The cost is $100 per person and reservations can be made by calling 210-554-6484.
