The Celebration of Cuisines program continues at Nao with a Brazilian menu launching on Tuesday January 21 which will run for six weeks until March 3. In an effort to explore new flavors from Latin America Nao is introducing different menus inspired by various regions and headed by Executive Chef Geronimo Lopez. Past menus have included cuisines from Oaxaca, Peru and the Spanish Caribbean and will soon include Argentina, Chile and Venezuela.

The Brazilian menu is the fourth installment in this program featuring the culture and cuisine that has been influenced by the Portuguese, Africans and native Brazilian people. The menu will include seafood from the Brazil’s seaside state of Bahia paired with indigenous fruits and vegetables as well as the native papaya.

Guests to Nao during this time will get to experience this unique blend of flavors and traditions and listen to the sounds of the Bossa Nova and enjoy the art of the Brazilian culture. This special prix fix menu includes an appetizer, main course and dessert for $39. A special Brazilian cocktail is being offered by beverage manager Tim Bryand as he mixes a Caipirinha made with Cachaca, demerara sugar and lime.

The appetizer choices are: Moqueca Capixaba, a Bahian style lobster stew with manioc and plantain, sofrito and malagueta pepper or a Xuxu Salad made with Chayote and Hearts of Palm with citrus supremes dressing.
The main course choices are: Picanha & Molho Verde, a Fatty Cap sirloin with fried manioc, heart of palm and avocado salad or Shrimp “Vatapa”, Arroz Dende e Caju, a Bahian Peanut and shrimp sauce served with cashew and palm oil rice, and fried plantains.
The dessert consists of Crème de Papaya con Cassis, a Papaya mousse with Cassis liqueur, ginger and Brazil nut crumble.

Nao is a student staffed restaurant at The Culinary Institute of America located at the grounds of the Pearl Brewery. The goal of this fine restaurant is to celebrate Latin food, traditions and culture. Nao's menu is made up of traditional Latin American dishes with a modern twist.
