As noted in the item posted by this Kansas City Vegan Examiner on March 11, 2014, “Dreams of Delicious Vegan Gluten-free Cakes Really Can Come True!” Linda Fisher of Swheatez Gluten Free Vegan Cakes & Ice Creams makes really wonderful cakes. If you have already gone vegan and gluten-free or are moving toward vegan and gluten-free and have given up on finding a delicious vegan and gluten-free source for cakes, look again. The cocoa mocha cake mini cupcakes in the accompanying photo are both vegan and gluten-free. But mostly, they are delicious.
If you have tried vegan gluten-free baked goods but found them to be gritty, dry, and tasteless, you must give yourself the gift of trying these mini cupcakes from Linda Fisher. They are soft, moist, and melt-in-your-mouth yummy. These tiny cocoa mocha cakes even have a surprise creamy filling. And of all things, the cakes contain gluten-free wheatgrass, Linda said. Apparently, wheat grass does not contain gluten, but as always, if you have celiac disease or otherwise absolutely must avoid gluten, do your research on the origin and manufacturing processes of your wheatgrass. Heavily into growing her own wheatgrass and watercress sprouts, Linda told at least one vegan that she also otherwise uses non-GMO certified or organic ingredients in her baking. She also makes vegan ice cream, which she decided to learn how to make because her granddaughter could not eat anything with dairy in it.
