This recipe comes from the book Baby Love which can pick found in the Blasco Library here in Erie. It is suitable for babies 10 months and up. Stay tuned for more great recipes from this book.
Ingredients:
- 1.5 lbs fresh or frozen strawberries (Erie County Farms just got some strawberries in. You might be able to still scoop some up!)
- 3 bananas
- 1/4 pineapple
- 1 cup water
1) Remove strawberry stems and wash the berries. Slice the bananas and cut the pineapple into chunks.
2) Put everything into a 4 quart pot and cook, covered for about 6 minutes, stirring once. Carefully pour the mixture into a strainer with a bowl underneath to save the juice.
3) Pour cooked fruit into a blender. Puree until smooth using 1/4 to 1/2 cup juice for consistency.
4) Pour into two ice cube trays to cool. Wrap, freeze, and defrost as needed. (Or serve immediately when cool!)
This sounds like a great recipe for the upcoming season. You could even add this mixture to some plain yogurt for a little extra flavor.
