My most special memories are of watching my mom Rosita cook her famous eggrolls. She would be in that kitchen for hours cranking them out by the hundreds. The reason was once you had one you wanted more. It wasn't just our family but our friends, their friends, and as word of mouth spread everyone wanted Rosita's eggrolls. This is how I learned to make them and as I got older, it was my task to help roll them. I must admit this recipe is close but mine are not quite as good. I believe it was the special love my mom put in them or so she said.
1lb ground beef
2 carrots diced small
2 celery stalks diced small
1 small onion diced
1 garlic clove minced
1 tsp soy sauce
1 tsp accent seasoning
1 pkg eggroll wrappers
1. Saute onion, garlic, carrot, and celery until tender.
2. Add ground beef and seasonings. Brown meat.
3. Add soy sauce. Adjust seasonings to taste. Cool mixture before wrapping eggrolls.
4. Wrap eggrolls using package instructions.
Serve with your favorite sauce. We use vinegar with a crushed garlic clove. Great with hot Chinese mustard, duck sauce, or hot sauce.
