Blackstrap molasses is an excellent source of iron, calcium, potassium and magnesium, along with copper and magnesium. It is a good source of vitamin B6 and selenium. These minerals help prevent iron deficiency anemia, help maintain proper enervation of muscles, strong bones, proper blood pressure, proper energy production and utilization and so much more.

There are plenty of ways to sneak that tablespoon (or maybe two) into your daily diet. You can stir it into a glass of milk and drink it down. You can mix it into a fruit smoothie or into your morning coffee or tea. You can bake it into cookies or breads or use it in vegetable dishes like baked beans or glazed carrots.
Here is a lovely recipe for a molasses gingerbread muffins. Just the smell of all these fragrant ingredients baking in your oven will make your house smell heavenly for hours!
- 3 cups flour
- 5 teaspoons ground ginger
- 2 teaspoons cinnamon
- 2 sticks butter
- 1 cup light brown sugar
- 1 cup blackstrap molasses
- 1 cup boiling water
- 2 teaspoons baking soda
- 2 large eggs, lightly beaten
Preheat oven to 350°F. Whisk flour, ginger and cinnamon together, and cream the butter and brown sugar.
Whisk the molasses and boiling water together and add the baking soda. Add the flour and molasses mixture to butter mixture.
Beat in the eggs until smooth and thin, then pour the batter into a muffin pan lined with cupcake papers and bake for 20-25 minutes.
You can also add a half cup or so of raisins or chopped figs to the batter before baking, if you like. Serve with whipped cream or perhaps some lemon curd from the Wise Choice British Imports shop in Huber Heights. Add a cup of hot tea and curl up with a nice book and you're all set!
