Mmmm Ceviche

So what do you do when you have a sudden craving? Do you run out to your favorite restaurant and score the delicious treat? Do you call your mom and beg her to cook your favorite? Do you run to the store and buy the ingredients and make it yourself? OR do you do what I do: search your cabinets and refrigerator and shelves for similar ingredients and kinda make up something just as good or better?

So the other day I had the craving for Shrimp Ceviche. I know what it tastes like. I knew some of the ingredients. Obviously: shrimp, onions, avocado, tomatoes, something and something else. So I had my son search Google for some recipes and he pulled one up, but who keeps Worchestire (or however you spell it) in their house? I can't even say the name! So here's my recipe for quick Shrimp Ceviche! Ole!

Cooked shrimp (a cup or more, cut into pieces)

Imitation flake crab meat (cut into small chunks, a cup or more, it's up to you!)

1/2 cup lemon juice

squeeze in the juice of one lime

1 tbsp of ketchup

1/2 packet or Chili sauce

1 packet of soy sauce

1 avocado (pitted, diced or cut into chunks...up to you!)

diced onion and celery (I buy those already cut up packages at the grocery store for salads) maybe 1/2 cup

1 can of Rotel or Diced tomatoes w/ chiles and onions (I'm all about generic brands!)

1 packet of Stevia (or sweetener of your choice, Sweet N Low probably won't work, maybe Splenda)

Mix well and serve with tortilla chips, saltines (Saltines or Wheat Saltines sprayed with olive oil cooking spray and sprinkled with coriander and half a packet of Italian dressing seasoning, and baked at 350 degrees for 10 minutes is sooo good!), celery, cucumbers, whatever you like to dip with! Best served chilled. Bon Appetit!
