Mint Oreo cupcakes

Cupcake Ingredients
½ cup butter, room temp
1 cup milk
2 tsp. vanilla
2 ¼ cups and 2 tbsp. flour
1 tsp. baking powder
½ tsp. salt
1 2/3 cup sugar
3 egg whites, room temp
1 (15.25 oz) package mint Oreos

Frosting Ingredients
1 cup and 2 tbsp. butter, room temp
5 ½ cups powdered sugar
½ tsp vanilla
1 tsp. mint extract
3 tbsp. milk
Green food coloring

Begin by preheating your oven to 350º. Prepare two cupcake pans with cupcake liners. Remove one cookie from each of 24 Oreos and place filling-side up in each liner.

Make your cupcake batter by creaming butter in a mixer. Add in the milk and vanilla. Beat until well combined. In another bowl, combine dry ingredients, leaving out 2 tbsp. flour. Slowly add into the mixer until mixed well. Beat in the egg whites one at a time, then turn mixer onto high and beat for 1 minute. With the remaining 24 cookies, cut each in half. Place 24 halves to the side and half the remaining once more. Crumble the single cookies you removed from the original 24 Oreos. Fold the quartered cookies into the batter.

Pour the cupcake batter over the cookies in the liners and bake for 20 minutes. While baking, prepare your frosting. In a mixer, cream butter and ½ cup powdered sugar. Slowly incorporate the rest of the powdered sugar, beating until stiff peaks form. Mix in the vanilla, mint, and milk. Once your cupcakes have cooled, frost them and garnish with the crumbled cookies and cookie halves you set aside. Enjoy your festive treat!
