Milky chocolate cottage cheese cupcakes, easy box mix recipe, super moist

Move over pudding!  You are not the only ingredient that will make a cupcake super moist!

If you like super moist cupcakes, and if you are brave enough to try unusual things, you must run to your kitchen and whip up a couple dozen Milky Chocolate Cottage Cheese cupcakes!

Adding cottage cheese to cake mix is something I dreamed up as a way to give chocolate cake batter a milk chocolate taste. I soon discovered that not only did it make the cupcakes taste great, but it also made them super moist and super duper delicious!

Milky Chocolate Cottage Cheese Cupcakes

Dump a box of your favorite chocolate cake box mix into a mixing bowl.  You want to use a box that makes a two layer cake. Ignore the box instructions and follow the instructions below.

Add 3 eggs, 1/2 cup of shortening, 1 cup of whole milk, and 1/3 cup of cottage cheese to the bowl.  Beat with an electric mixer until well blended... medium, high, one minute, two minutes... it really does not matter! The batter should be thick and the color should have gotten a lighter shade of brown. When that happens, you beat it enough.

Preheat the oven to 350 degrees.  Fill your cupcake tins about 1/2 full.  Bake for 20 minutes.  Chomp down a couple cupcakes and guzzle a glass of ice cold milk. Now relax because you did a good job!

If you want a simple and delicious glaze for these cupcakes, use my Easy Lemon Glaze (the world's easiest lemon glaze, to be exact).  Yes, lemon and chocolate go great together!  Glaze the cupcakes while they are still warm, then let them cool. The glaze will dry and will be shiny.  Lemon and chocolate... yum!  Sort of makes you think of an eclair or something! Oh, now you need to chomp down a couple more!

Tips: As always, you can also bake as a cake. You do not have to make cupcakes.  If making a Milky Chocolate Cottage Cheese Cake, I suggest you add 5 to 10 minutes to the suggested baking time to allow the cottage cheese to do it's magic!
