Microwave Pecan Pie (Photos)

Do you like pecan pie? Do you like fast and easy recipes? If so, this is for you! No need to heat up the oven for this pie. From beginning to end in 30 minutes! Get ready to impress yourself and your guests!

Microwave Pie Crust

1 1/2 cups King Arthur unbleached all purpose flour

6 Tablespoons shortening, cold

3 Tablespoon margarine, cold

1/4 teaspoon salt

5 Tablespoon ice water, more or less if needed

Stir 1 1/2 cups flour and salt together. Add margarine and shortening. Using a fork or pastry blender, work the shortening and margarine into the dry ingredients until it resembles little peas. Add 1 Tablespoon water at a time to the mixture, mixing with a fork until a ball is formed when pressed together. Transfer to a lightly floured surface and roll in a circle that is 1/8"thick and large enough to hang over sides of 9" microwavable pie plate. Put in pie plate and trim, leaving a 1/2" overhang. Fold overhang under and crimp with fingers to form edge. Cook in microwave at 50% for 1100 watt microwave, for 2 minutes. Check and cook another 2 minutes, 1 minute at the time. Moisture should be gone from the crust yet not hard. Do not overcook.

Microwave Pecan Pie Filling

3 eggs, beaten

1 cup brown sugar, packed, make your own

1 cup Karo syrup

3 Tablespoons margarine, melted

1/4 teaspoon salt

1 teaspoon vanilla

1 1/2 cups pecan halves

1 precooked microwave pie crust..recipe above

Mix all together in large bowl. Pour into precooked microwave pie crust. Cook on medium high in 1100 watt microwave, for 10 minutes. Cook another 10 minutes checking after 5. Then cook 1 minute at a time until done. It is done when it doesn't wiggle when shaken and pie springs back when lightly touched. Crust will not brown. Let cool for 2 hours to over night. Enjoy!
