Walking into my room on the 35th floor, the clear beautiful skies were that just perfect shade of sunset. The floor to ceiling windows and amazing view seemed to stretch to the Florida Keys. I invited dear friends Chef Chad Cherry and his wife Karen owners of Bring Organics Back, to join me for a evening of wonderful luxurious dining.
Dinner started with heavenly (I kid you not) French popovers called gougeres. Warm, light and just make you smile delightful. There are many levels to dining and I am so pleased that all my many meals as a food and resort journalist have given me appreciation for this magic moment. And I might add one of the more sumptuous Miami Spice menus. We had the Pate de Champagnes, Baby arugula salad with fresh figs, jamon serrano, candied walnuts and valdéon cheese balsamic reduction.
For entree's Chad had the Frenchie Burger with Arugula, tomato compote, rillion, morbier cheese caramelized onions and french fries. I had a chicken fricassee that made me wanna kiss Chef Matthieu Godard full on. Karen enjoyed a hearty Pan seared Hanger steak, Short rib ragout, creamy polenta, asparagus grilled piquillo peppers, chimichurri sauce. But we weren't finished for what would be a french meal without dessert!
I've included it all in the video but in it we neglected to discuss the devil's food cake with smoked maple bacon ice cream which honestly could have a paragraph of it's own...Later we had cocktails, and went bowling. BOWLING on the 19th floor of the hotel which is the entertainment level replete with a regulation size basketball court, ( The Cleveland Cavaliers were there during my stay) a pool hall, the bowling alley and you can play golf right in the hotel!
