Mexican posole and Tex-Mex pork kabobs

Quick and easy to make, posole is a type of salsa from the Pacific Coast. This goes perfectly with the Tex-Mex pork kabobs. And you can add some diced avocados, chopped radishes and lime wedges, if desired.

Here's what to do:

Mexican Posole

Ingredients

1 Tbs corn oil

2 zucchini, cubed

1 red pepper, cubed

½ tsp ground cumin

1 can (15 oz.) hominy, drained and rinsed

1 can (14 oz.) chickpeas (garbonzo beans), drained and rinsed

1 pkg (2.2 oz.) roasted-garlic-herb-flavored soup mix

3 Tbs chopped fresh cilantro

Heat the corn oil in a large skillet over medium-high heat.

Add zucchini, pepper and cumin; cook for 4 minutes, stirring constantly.

Stir in the hominy, chickpeas, soup mix and 1 ¼ cups water; bring to a boil.

Reduce heat; simmer for 5 minutes.

Stir in cilantro.

Serve with assorted fresh condiments.

Makes 4 servings

Additional Options

The red pepper can be replaced with: 1 bunch of scallions, chopped, 1 large red onion, 2 Poblanco peppers, 2 Italian frying peppers, 1 green pepper or 2 yellow peppers.

Don't like zucchini? Then use 1 large turnip, diced; 3 cups sliced cremini mushrooms, 2 yellow summer squashes, 2 ½ cups cubed butternut squash, 1 large sweet potato, cubed; or 2 ½ cups pattypan squash.

Instead of chickpeas, go for red kidney beans, cannelini beans, black beans, black-eyed peas, pigeon peas or pinto beans.

Tex-Mex Pork Kabobs

Ingredients

1 lb pork tenderloin, cut into 1 ½ “cubes

¾ cup orange juice

1 tsp freshly grated orange zest

1 pkg (1.25 oz.) prepared taco seasoning mix

3 red onions, quartered

Soak wooden skewers in water for 20 minutes.

Heat the grill to medium-high for direct heat or heat the broiler.

In a plastic food storage bag, combine the pork, orange juice, zest and taco seasoning mix; seal and shake to coat.

Alternately thread wooden skewers with seasoned pork and onions.

Grill or broil 8 minutes, turning once.

Serve with Mexican Posole.
