Mediterranean quinoa salad recipe

1 cup quinoa
1 ½ cups water
1 cup tomato, sliced
1 cup cucumber, sliced
¼ cup red onion, diced
¼ cup kalamata olives
¼ cup feta
1 can (15 oz) chickpeas
3 tbsp. lemon juice
3 tbsp. olive oil
½ tsp. oregano
1 garlic clove, grated
Salt and pepper to taste

Rinse the quinoa and bring to a boil. Simmer, covered, for 15 minutes or until the liquid is absorbed. Let sit covered for 5 minutes, then let cool. Drain and rinse the chickpeas and prep the other ingredients. In a bowl, toss together the cooled quinoa with the rest of the ingredients, making sure that everything is well coated in the lemon juice and seasonings. Your beautiful salad is ready to be served!
