Mediterranean orzo recipe

 

This dish captures Mediterranean flavors in a pasta dish that can be served either cold or warm.  Orzo is a pasta that has a texture similar to rice.  You can play with the ingredients.  If you really like olives, add more of them or if you really like the taste of the feta cheese, add more of that ingredient. 

Mediterranean Orzo

  • 4 c. fresh spinach leaves
  • 2 TBS. olive oil
  • 1 garlic clove, crushed
  • 1 c. orzo, cooked according to package directions
  • 1/4 c. Kalamata olives, sliced
  • 1 TBS. lemon juice
  • 1/2 c. Feta cheese, crumbled

In a medium skillet add olive oil, garlic and spinach leaves.  Cook on medium high for 5 minutes.  Meanwhile cook the pasta according the package directions and drain.  If you are choosing to serve this cold you will need to cool the pasta at this point.  In a large bowl combine the cooked spinach, orzo, olives, lemon juice, and cheese.  Serves 3 to 4.

    I make this salad sometimes using orzo, but more often than not, using short grain(sushi) rice..best eaten the first day with the rice :)I add minced hard boile eggs sometimes or roasted red bell peppers.
