Meatloaf is one of those comfort foods that everyone grew up with. Although it’s a combination of ground meat, vegetables, and egg, everyone claims to have a special ingredient to make it the best meatloaf possible. This easy meatloaf recipe has special ingredients as well, and the result is a moist, delicious meatloaf that is simple to make and absolutely delicious.

For those of you looking to include less wheat in your diet, this meatloaf recipe is perfect. For those of you looking to include more fiber in your diet, this recipe is perfect. Oatmeal is used in place of bread crumbs – a way to add a fiber-based bulk.

There are some things that are best mixed together with your hands and meatloaf is one of them. To mix it as thoroughly as possible in the most efficient way, just use your clean hands. For those of you uncomfortable mixing food with bare hands, you can purchase plastic food-preparation gloves in larger grocery or food stores. Another easy way is to put large food-storage bags over your hands.

One of the best things about meatloaf is the wonderful sandwiches you can make from the leftovers! This recipe makes fabulous sandwiches – you will love them!

Easy Meatloaf Recipe

Ingredients for Easy Meatloaf:

  • 1 pound ground beef (ground chuck is great, as it has a little fat that adds to the flavor, but any ground beef works well)
  • ½ cup carrots, grated
  • ¼ cup onion, grated
  • ½ cup cheese, grated (cheddar or co-jack work well)
  • 1 egg
  • ½ cup oatmeal
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 ½ tsp. garlic powder
  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 1 tsp. mustard

Directions for making Easy Meatloaf:

Preheat your oven to 350 degrees. Lightly grease a 9”x5” loaf pan.

In a large bowl, combine, the ground beef, grated carrots, grated onion, cheese, egg, oatmeal, salt, pepper, and garlic powder. Combine well using your hands.

Pat the meat mixture evenly over the bottom of the prepared pan.

In a small bowl, stir together the ketchup, brown sugar, and mustard – spread evenly over the top of the meat mixture.

Bake at 350 degrees for 45 – 55 minutes.
