Fresh Winter Greens
Mustard Greens – are rich in vitamin K. Sautee onions garlic and add a slice or two of bacon. Add some washed greens to the skillet and simmer for 1 hour.
Kale- is rich in potassium. Sautee with onions, garlic and jalapeño. Simmer for 20 to 30 minutes.
Beat greens- are rich with calcium and potassium. This green is very good in your favorite omelet. They are also very tasty baked with onion in your favorite cornbread.
Collards – are rich in potassium. Try steaming them in a pot with onion and peppers. Add liquid smoke and herbs instead of meat. This will make them low in sodium. This is very good served with cornbread.
2/3 cup butter or margarine, softened
1 2/3 cups milk
2 1/3 cups flour
1 cup cornmeal
4 1/2 teaspoons baking powder
1 teaspoon salt
¼ cup chopped onion
1. In a mixing bowl, cream butter and sugar.
2. Combine the eggs and milk. Combine flour,
cornmeal, baking powder and salt; add to
creamed mixture alternately with egg mixture.
3. Pour into a greased 13-in. x 9-in. x 2-in.
baking pan. Bake at 400 degrees F for 22-27
minutes or until a toothpick inserted near the
center comes out clean. Cut into squares;
serve warm. When done make fork holes in
top of bread and add 1 stick of melted margarine .
