What are carrots good for?

Beta Carotene

Carrots have vitamin A which is good for the skin. One cup can provide one dose which has 686 percent of your daily

requirement. Two basic forms of vitamin A are found and one is found in carrots. Preformed vitamin A is found in animal

sources and a vitamin source found in carrots. Researchers say that the preformed vitamin A , which is stored in fat cells which

is fat soluble may be linked to bone loss and fractures. The body’s metabolism converts vitamin A into a pro vitamin which is beta-carotene. Beta carotene protects the body against ultra violent rays (livestrong.com).

Skin

Vitamin A is effective in treating eczema. Medication made from alitretinoin is used to treat skin lesions and severe eczema. It

is also used to treat skin tumors.

Eye

Beta carotene also supports the eye.

Carrot soufflé

Ingredients

1 lb carrots( boiled and mashed)

¾ cup sugar

1/2 cup butter

3 eggs (beaten)

4 tlbs flour

1 teaspoon vanilla

1 teaspoon cinnamon

½ teaspoon nutmeg

Direction

Mix all ingredients in mixing bowl. Preheat oven to 350.
Pour all ingredients into a prepared baking dish of 8 by 8.
Soooo Yummy!

Bake for 45 minutes to 60 minutes.

Serve hot or cold.

Carrot Cookie

¾ cup butter

1 ¼ cup brown sugar

2 eggs

1 can crushed pineapple 8 oz.

1 cup shredded carrots

1 cup raisins

2 ¼ cup flour

1 teaspoon baking powder

½ teaspoon baking soda

1 tablespoon ground cinnamon

1 cup chopped walnuts

Direction

Preheat oven 350.

Cream ingredients butter, sugar and eggs. Add carrots, pineapple, nuts, raisin. Add all dry ingredients. Stir in carrot mixture.

Prepare cooking sheet with parchment paper. Drop small spoon size portions on sheet an inch apart. Bake 15 minutes.

makes about 3 1/2 doz.
