Sweet and sour shrimp looks like it should be fussy, but with the help of frozen cooked shrimp and sauce that is easily prepared in the microwave, the entire meal takes about a half hour to prepare. The sauce develops its flavor if it is refrigerated for a day or so, so any leftovers will be more flavorful. One dish - 30 minutes - that makes the challenge of going meatless less aggravating.
Sweet and sour shrimp
2 tbsp. corn starch
1/2 c. granulated sugar
1/4 c. water
16 oz. unsweetened crushed pineapple in juice
1/2 c. cider vinegar
1/2 c. chopped green pepper
1/2 tsp. garlic powder
2 tbsp. soy sauce
scant dash crushed red pepper
1 lb. medium cooked shrimp, thawed and drained
Whisk together corn starch and sugar in microwave-safe casserole dish. Add water, pineapple and juice and vinegar. Whisk together until sugar and starch are dissolved. Add green pepper, garlic powder, soy sauce and red pepper. Microwave on high for 5 to 7 minutes, stirring every two minutes to avoid scorching; sauce will become thick and clear.
Add shrimp, coat thoroughly, and microwave for an additional 3 to 4 minutes. Serve over rice. Serves 4.
