Meals in Minutes- Shrimp and pasta dishes

Some nights you want a delicious home cooked meal that isn't from your freezer and you don't have a lot of time to prepare it. This video shows you one quick version of Shrimp and Pasta that can be ready in 15 minutes.

Microwave Shrimp Scampi is another recipe that can be prepared almost as quickly as the dish shown in the video. In either case, you can have a delicious seafood and pasta dinner at the table in minutes and not hours.

Microwave Shrimp Scampi

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 lemons
  • 1/2 cup butter
  • 1 1/2 pounds shrimp, cleaned
  • 1/4 tsp garlic powder
  • 1/4 tsp garlic pepper
  • 1/2 tsp garlic salt

Place rice and chicken broth in a medium saucepan bringing to a boil over high heat. Cover, lower heat to medium low and simmer for 15 minutes.

Grate lemon zest and squeeze juice. Combine zest, juice, and butter in microwave safe dish and microwave on high for 2 minutes. Sprinkle garlic powder, garlic salt, and garlic pepper over shrimp and add to butter mixture. Evenly coat shrimp with mixture. Cover and microwave on high for 2 minutes. Stir well, cover again and microwave on high for an additional 1-3 minutes until shrimp turn pink.

Let shrimp stand for 2 minutes, covered. Fluff rice with fork, serve shrimp and sauce over rice. Enjoy your quick dinner.

The shrimp scampi can also be served with pasta in place of the rice which would cut down on the cooking time
